Like DisplayLabel, DisplayFormat, Visible, etc? Looks like a bug to me. You have to set TDataSetProvider.Options.poIncFieldProps. Even then it doesn't get all of them. Not much. Doing the network hop in the first place costs you more than the bytes, and you can't really get away from that if you want data.
