If I buy D7 Enterprise right now, what is the most likely upgrade path to D8
when it comes out?

For now, D8 is not officially announced or released as yet. I guess if you
purchased during
the official announcement period, you might be provided with a free upgrade
path or you could
always return the package and get the new version.

If you do not need D7 right now then just wait for the official release of
D8 (was it 1st quarter of 2004)
and get it at that point.

If you are talking about upgrading as in paid upgrade, that is open to any
one at any time. You do not
progressively upgrade every time. You may want to skip versions if the
upgrade does not contain features
which may be useful for you.
