3 applications using Indy 8.0.25 (written in the past), I have been asked to
re-write one of these apps. I would like to do this in a later version of
Indy (10.0.20), the apps. traffic use strings and in some cases streams to
communicate. Can I do this without disturbing (time constraints) other 2
apps.

In theory, yes -- as long as you ensure you don't change the actual
communication protocol (the data exchanged) it should be fine :)
