There was a post here a while back where someone mentioned that their
company was running their Delphi development PC's on VMWare (GSX or ESX?)
Server kind of like how you would use Citrix or Terminal Server. I was
wondering how it went?

Works just fine: Delphi (like any other Windows app I run in VMWare) works
great.
Highly recommended - VMWare is really one of those killer apps: once you
start using it, you can't imagine how you ever lived without it.

I am using a VMWare workstation on a Linux host running Windows 2000
Terminal server as guest, so I can connect to it via the free rdesktop
client from another Linux box. Works great.
At work we use a similar setup but running on a Windows host. There multiple
developers connect to the same VMWare again running W2K TS.
Unfortunately performance has degraded quite a bit with the update from
Delphi 5 to 7.
